			<content:encoded><![CDATA[<h3><span style="color:#339966;">Il 5 dicembre 2011 a Monteleone di Spoleto  si terra il seguente seminario:</span></h3>
<p>Realizzare un dossier da sottoporre all&#8217;attenzione della FAO per consacrare il farro di Monteleone di Spoleto Dop  come &#8220;patrimonio alimentare dell&#8217;umanità&#8221; e inserire questo alimento in una nuova lista di prodotti finalizzata alla tutela della biodiversità  e alla lotta contro la fame. &#8220;L&#8217;Unesco ha dichiarato la dieta mediterranea patrimonio immateriale dell&#8217;Umanità. Quindi  &#8211; ha affermato nel corso di un recente convegno Diana Bracco, vice presidente di Confindustria per il progetto &#8220;R&amp;I&#8221; e presidente di Expo 2015 Spa &#8211; la Fao potrebbe ora promuovere un&#8217;iniziativa simile che abbia lo scopo di premiare e preservare la biodiversità come patrimonio alimentare dell&#8217;Umanità&#8221;. E&#8217; dunque partendo da questi presupposti che il prossimo 5 dicembre (dalle ore 9) nel  Teatro Comunale di Monteleone di Spoleto, è stato organizzato un seminario di studio sul tema &#8220;Il farro di Monteleone di Spoleto DOP patrimonio alimentare  dell&#8217;umanità&#8221; in cui si confronteranno esperti, amministratori e sostenitori dell&#8217;iniziativa da lanciare ad Expo 2015 di Milano, dedicata al tema  &#8220;Nutrire il pianeta, energia per la vita&#8221;, in quanto manifestazione ideale per promuovere il progetto.</p>
<p>Al seminario, coordinato da Mario Falcinelli (Università degli Studi di Perugia) e Isidoro Peroni  (Sapienza Università di Roma), dopo il saluto del sindaco Nando Durastanti, del Presidente Comunità Montana Valnerina, Paolo Silveri, e il  presidente CEDRAV, Pietro Bellini, interverranno:  Marisa Angelini (Comunicatore  e Pubblicista) presentazione progetto comunale &#8220;Dal patrimonio culturale dell&#8217;Unesco al Patrimonio alimentare della FAO&#8221;, Mario Polia (Antropologo) Università Pontificia Gregoriana-Direttore Museo Demoantropologico  di Leonessa  &#8220;Il Farro patrimonio culturale&#8221;; Mario Marino (FAO) &#8220;Il trattato Internazionale FAO sulle risorse genetiche vegetali per l&#8217;Alimentazione e l&#8217;Agricoltura: dalle strategie internazionali alle strategie locali&#8221;, Oriana Porfiri (Agronomo) &#8220;Il farro di Monteleone di Spoleto quale caso studio di azione locale nel contesto europeo e nazionale  di salvaguardia delle risorse genetiche vegetali&#8221;,  Renzo Torricelli (Università degli Studi di Perugia) &#8220;L&#8217;identità genetica del farro  di Monteleone di Spoleto quale primo strumento di salvaguardia&#8221;,  Massimiliano De Angelis  (Università degli Studi do Perugia) &#8220;Il farro nella prevenzione e terapia delle malattie cardiovascolari&#8221;,  Federico Mariotti 3A -PTA &#8220;La certificazione della DOP farro di Monteleone di Spoleto come opportunità per l&#8217;areale produttivo&#8221;,  Isidoro Peroni  (Sapienza Università di Roma &#8211; Associazione farro di Monteleone di Spoleto) &#8220;La nuova Società s.r.l. Farro DOP di Monteleone di Spoleto&#8221;. Alle 11.45  chiusura dei lavori  e sottoscrizione del Dossier per la proposizione  della presa d&#8217;atto  del Consiglio  Comunale di  Monteleone di Spoleto nel giorno della celebrazione del  Santo Patrono San Nicola. A seguire tradizionale Benedizione del farro presso la canonica  della Chiesa di San Nicola, e distribuzione della zuppa di farro.</p>

<p><span style="text-decoration:underline;color:#008000;">INGREDIENTI (per 4 persone)</span></p>
<ul>
<li>400 gr. di fusilli</li>
<li>200 gr. di piselli freschi o surgelati</li>
<li>200 gr. di funghi champignon</li>
<li>1 confezione da 200 ml di panna da cucina</li>
<li>16 pistilli di zafferano di Cascia</li>
<li>aglio</li>
<li>olio extra vergine d&#8217;oliva, sale e pepe</li>
</ul>
<p><span style="text-decoration:underline;color:#008000;">PREPARAZIONE:</span></p>
<p>In una pentola far bollire l&#8217;acqua aggiungere un pugno di sale grosso e cuocere la pasta minuti in meno rispetto  alla cottura indicata nella confezione. Mentre in padella mettere l&#8217;olio extra vergine d&#8217;oliva, una becca d&#8217;aglio, i funghi e i piselli. Cuocere per 1o/15 minuti e aggiungere la panna.</p>
<p>A cottura ultimata aggiungere l&#8217;infuso di zafferano.</p>

<p>Scolare la pasta aldente e ripassarla nella padella con il condimento.</p>

<p>In una pentola mettere a scaldare il brodo preparato precedentemente.</p>

<p>Mentre in una padella, un po grande, mettere la cipolla finemente tritata e l&#8217;olio extra vegine di oliva.</p>

<p>Lasciare soffriggere un paio di minuti ed unire il riso fino a farlo tostare. Sfumare con del vino bianco.</p>

<p>Di volta in volta aggiungere il brodo con un mestolo fino alla cottura del riso.</p>

<p>Unire l&#8217;infuso di zafferano  mantecare con il il burro ed un po di parmigiano.</p>

<strong><span style="text-decoration:underline;">INGREDIENTI (per 4 persone)<br />
</span></strong></p>
<ul>
<li>200 gr. farro spezzato (6 pugnetti)</li>
<li>400 gr. di pelati o salsa di pomodoro</li>
<li>1 cipolla</li>
<li>sedano</li>
<li>1 carota</li>
<li>olio extra vergine di oliva</li>
<li>2 patate</li>
</ul>
<p><span style="text-decoration:underline;"><strong>PREPARAZIONE</strong></span></p>
<p>Tritare finemente la cipola la carota e il sedano e farli rosolare nella pentola con olio e pomodoro e le patate tagliate a dadini. Versare poi acqua e appena arriva a bollore mettere il farro.</p>
<p>Far cuocere per un&#8217;ora circa mescolando frequentemente.</p>

<li>500 gr. di farina di roveja</li>
<li> 4 uova</li>
<li>250 gr. di burro</li>
<li>200 gr. di zucchero</li>
<li>1 limone ed 1 arancio</li>
<li>1 bustina di lievito (si può usare anche un cucchiaio di bicarbonato)</li>
</ul>

<div>Porre  sulla spianatoia da cucina, la farina e farvi un buco al centro (a   fontana), il burro (tolto dal frigo almeno 2 ore prima), le uova, lo  zucchero, la scorsa del limone e dell&#8217;arancio grattugiate e la bustina  di lievito.</div>

<div>Poi amalgamate, con le mani, bene tutti gli ingredienti, fino a ottenere un impasto morbido ma composto.</div>
<div>Quindi dare forma ai biscotti. Tale procedura puo avvenire in due modi:</div>
<div>a)prendendo  un mattarello e stendendo l&#8217;impasto sulla spianatoia,  in modo che non  sia troppo sottile ma neanche troppo alto, e tagliarlo a rombi o altre  forme;</div>

<div>b)formando delle  piccole ciambelline di pasta di circa 10 cm di circonferenza.</div>

<div>Una  volta preparati i biscotti disponeteli sulla griglia con sotto carta  forno, mettere nel  forno ventilato  preriscaldato a 180 gradi e cuocete  per 10  minuti.</div>
<div>Questi biscotti  di farina di roveja hanno un sapore buonissimo e molto  particolare&#8230;niente a che vedere con la maggior parte dei biscotti  comuni.</div>

<p>300 gr. di farinadi ceci bio</p>
<p>1 litro di acqua</p>
<p>sale q.b.</p>
<p>olio extra vergine di oliva</p>
<p>pepe</p>

<p>Diluire la farina nell&#8217;acqua sciogliendo i grumi e salare.</p>

<p>Tenere la pastella a riposo per almeno 3 o 4 ore poi togliere la schiuma che vi si forma sopra.</p>
<p>Versare abbondante olio extra vergine di oliva (circa 1/10 della miscela acqua più farina) in un tegame o in una teglia.</p>

<p>Aggiungere il composto ed amalgamare, in modo tale che l&#8217;olio, depositato sul fondo della teglia , passi in parte sopra !!!lo spessore a crudo deve essere di 6/7 mm.</p>

<p>Mettere in forno, precedentemente riscaldato, a 250 gradi e far cuocere  per 30 minuti, fin quando la superficie non sarà ben dorata, più se possibile qualche minuto di grill.</p>

<dd>Come molte delle mie ricette sostituisco alla farina di grano la farina di farro e la maggior parte delle volte viene fuori un buon risultato&#8230;.e questo vale per questa buonissima piadina!!</dd>
<dd>Tipica della gastronomia romagnola,  ma usata ormai in tutto il paese, si può mangiare calda o fredda, da sola o farcita. Può anche essere usato come sostituto del pane!</dd>

<dd>Impastare la farina, il sale e lo strutto aiutandovi con l&#8217;acqua necessaria per rendere l&#8217;impasto abbastanza consistente.</dd>

<dd>Manipolare l&#8217;impasto per alcuni minuti, suddividerlo in pezzi grandi come le  uova e stenderli formando dei dischi sottili. Preparare le piadine e disporle una sopra l&#8217;altra infarinandole.</dd>

<p><span style="color:#333399;"><span style="text-decoration:underline;">PREPARAZIONE:</span></span></p>
<p><span style="color:#333399;"><span style="color:#000000;">D</span></span>isporre la farina sulla spianatoia insieme con un pizzico di sale e la scorsa di un limone grattugiato, fare un buco al centro e versare un uovo intero, due tuorli , lo zucchero e il burro fatto a scaglie.</p>
<p>Impastare velocemente  il tutto per non far sciogliere il burro, altrimenti l&#8217;impasto risulterebbe troppo e lastico e poco friabile.</p>
<p>Prendere l&#8217;impasto,  avvolgerlo con della pellicola trasparente e metterlo in frigo per mezzora circa (se l&#8217;impasto è venuto molto molle lasciarlo nel frigo anche per un ora).</p>

<p>Preparare la teglia imburrandola o, meglio ancora, rivestirla con carta da forno (molto più leggera!!).</p>
<p>A questo punto stendere tutta la pasta e metterla sulla teglia. Tagliere le parti in eccesso, stenderle nuovamente e ritagliarle a striscioline (serviranno per la decorazione). Spalmare la marmellata e decorare con le strisce (solitamente la decorazione si fa ponendo le strisce come una maglia a rete, io invece ho disposto le strisce a raggera). Ripiegare i bordi e schiacciarli con una forchetta.</p>
